Gorima's
Kashmiri masala is the one to reach for when you want a properly red curry without setting anyone's head on fire. This is a fine, deep red grind that sits around medium, so it handles the colour while you decide how much extra chilli goes in on top. It works across meat, chicken or a pot of beans, so if you want one sensible everyday masala from the range, this is it. Mind the size too: 500g is a restocking quantity, not a try-it size.
How to use it. Fry two or three heaped teaspoons per kilo of meat into your onion, ginger and garlic base before any liquid goes in.
